We are deligthed that our guests can taste and purchase our extra virgin Olive Oil that is from only biological olives, harvest by hand and cold crushed in the day to guarantee the highest quality and lowest acidity.
The ‘Podere’ has approximately 2 hectars of olive groove; olive trees are fed and tended to, all the year long, but the fruits are typically harvested in the fall and early winter when they reach optimal ripeness.

We esxclusively picked them by hand. Olives drop on large nets that have been positoned under the trees. They are then selected and cleaned of leaves and soil and are transported to the mill in large boxes. Here, olives are washed ensuring that no impurities affect the oil quality.

The entire olive, including the flesh and pit, is crushed into a paste to release the oil using modern metal crushers. The olive paste is slowly mixed to allow small oil droplets to combine into larger droplets and finally oil is separated from water and solids by centrifuges.
